I’ve got 3 of my grands while they are on school holiday and let me tell you the weather is NASTY out today. I don’t want to take them anywhere because we have to be at a dance in just a few hours. It doesn’t give us much time to do anything considering how far we have to travel. We live in a small town. Nothing happens here. Well, it does, but only creepy mysterious happenings and sometimes funny but that’s another story post in the making.
So we did what I love to do, we cooked! I haven’t made Cheesy Rosemary Potatoes in a while so I decided today was the day. When the grandbabies got here we started some Rosemary Chicken in the crock pot (large pack of chicken breast, 2 small onions, 1/2 cup of butter (unsalted), 1 teaspoon of rosemary leaves, 1 bay leaf, salt and pepper to taste. An hour before it was going to be ready I made some garden fresh veggies and popped some Cheesy Rosemary Potatoes in the oven.
Cheesy Rosemary Potatoes
Ingredients
5-6 potatoes
1 onion diced
3 teaspoons flour (1 per layer)
1 cup of cheese (1/3 per layer)
Dash of Rosemary Leaves per layer
Salt and Pepper to taste
1 cup of low-fat milk
I peeled and sliced the potatoes and let the kids add the layers to the dish with all of the above ingredients except milk. I added the milk last, covered and cooked on 400 for 1 hour.
