Let’s be honest. We all have those days. Today is one of those days for me. I just don’t feel like cooking, and I figured I’m probably not the only one.

Maybe you’ve had a long day at work, spent hours running errands, haven’t been feeling your best, or you’re simply too tired to stand in the kitchen. I know there are days when even thinking about cooking feels exhausting. On those evenings, ordering takeout sounds tempting, but it isn’t always the healthiest or most budget-friendly option.

The good news is you don’t have to prepare a fancy meal to enjoy something satisfying. Sometimes the simplest meals end up being the most comforting.

Here are some of my favorite ideas for those “I don’t feel like cooking” kind of days.

Breakfast for Dinner

Who says pancakes and eggs are only for mornings?

Scrambled eggs, toast, fresh fruit, yogurt, or frozen waffles can come together in just a few minutes. If you have bacon or sausage already cooked in the freezer, even better.

Breakfast for dinner has always felt like a little treat around our house.

Rotisserie Chicken Is a Lifesaver

One rotisserie chicken can stretch into several meals.

You can enjoy it with a bagged salad, use it for sandwiches, add it to wraps, toss it into soup, or serve it with instant mashed potatoes and canned green beans.

It’s one of the easiest ways to get a homemade-style meal on the table without spending much time in the kitchen.

Snack Plate Suppers

Sometimes I don’t want a traditional meal at all.

A small plate filled with cheese cubes, crackers, grapes, sliced apples, cucumber, carrots, nuts, and maybe a little hummus can be surprisingly filling.

It’s simple, colorful, and there’s almost no cleanup afterward.

Soup and Sandwich

This classic never goes out of style.

Heat up your favorite canned soup while making a grilled cheese, turkey sandwich, or peanut butter and jelly.

It’s warm, comforting, and perfect for rainy days or chilly evenings.

Loaded Baked Potatoes

If you have a microwave, dinner is halfway finished.

Bake a potato in the microwave and top it with shredded cheese, sour cream, leftover chicken, broccoli, bacon bits, or chili.

Everyone can customize their own, making it an easy family meal.

Quesadillas

Tortillas and cheese are always good to keep on hand.

Add leftover chicken, beans, taco meat, or vegetables if you have them. Serve with salsa or sour cream, and dinner is ready in minutes.

Frozen Meals Don’t Have to Be Boring

There’s absolutely nothing wrong with keeping a few frozen meals in your freezer for busy days.

Frozen vegetables, grilled chicken strips, meatballs, ravioli, or family-size lasagna can save the day when your energy is running low.

Pair them with a salad or fresh fruit to round out the meal.

Pasta with Whatever You Have

Pasta is one of those pantry staples that can become dinner in almost no time.

Add butter and Parmesan cheese, jarred pasta sauce, pesto, olive oil with garlic, or toss in whatever leftovers you have in the refrigerator.

Simple doesn’t mean boring. In fact, easy pasta dishes remain one of the most popular low-effort meals because they’re quick, affordable, and endlessly customizable.

Sandwich Night

There’s no rule that says sandwiches are only for lunch.

Turkey clubs, BLTs, tuna salad, chicken salad, grilled ham and cheese, or even classic peanut butter sandwiches can make an easy dinner.

Serve them with chips, fresh veggies, or fruit and call it a meal.

Keep a Few Emergency Foods Around

I’ve learned it’s always helpful to have a few “just in case” foods tucked away.

Some of of my favorites include:

  • Canned soup
  • Macaroni and cheese
  • Instant mashed potatoes
  • Frozen vegetables
  • Frozen grilled chicken
  • Bagged salad
  • Peanut butter
  • Crackers
  • Tortillas
  • Pasta
  • Jarred spaghetti sauce
  • Rice packets
  • Canned tuna
  • Fresh fruit

Having these basics on hand makes those difficult evenings much less stressful.

Give Yourself a Little Grace

Not every meal has to look like something from a magazine.

Some days dinner is homemade lasagna with all the trimmings. Other days it’s grilled cheese and tomato soup. Both are perfectly okay.

Life gets busy. Sometimes we’re tired. Sometimes we’re hurting. Sometimes we simply need an easier option, and that’s nothing to feel guilty about.

Feeding yourself and your family doesn’t have to be complicated. A simple meal shared around the table is often more than enough.
